A last minute dinner that will bamboozle your entire family!

I promise your family with think you ordered from a restaurant if you make this for them!

First of all: THANK YOU GUYS for being so forgiving and understanding of me not uploading a video this week. Luckily Dylan and I just have a bad cold and not you know what...

As promised, here's a last minute dinner idea that will make everyone's belly happy. Make sure you check out my IG story to see me make it today. It'll be on my "Quick Meals" highlight once the 24 hours are up.

We're making a family sized Chicken sandwich with a side of garlic parmesan fries OR crudités. You can also just include both sides for a little razzle dazzle! I went with very basic veggies in the list below but go with whatever raw veggies your family will enjoy. You guys already know the rules of Make it Mondays; make it simple, make it cute, make it YOUR OWN!

Here's what you'll need!

*1 loaf of garlic herb french bread (got mine at Walmart)

(get regular french bread if you can't find garlic herb)

*Chicken Thighs (enough for your family) and seasoning

* Extra Sharp Cheddar Cheese (shredded or sliced)

* Muenster Cheese (shredded or sliced)

* 1 Hass Avocado

* 1 Cup Sour Cream

* 1 Packet Ranch Seasoning

* 1 lemon or lime

* Your favorite freezer aisle fries (optional)

* Baby Carrots, Bell Peppers, Celery Sticks (optional)

* Fresh Garlic (Optional)

* Fresh Parmesan (Optional)

* Butter (Optional)

Chicken Sandwich

This component is fun and easy. You can approach this many ways. Obviously before you do anything you want to clean and season your chicken. This can be done same day or a day or two in advance. Just be sure to safely store your chicken in the refrigerator while it marinates. If you're a regular around here you know I don't measure when I cook so get in touch with your ancestors so they can guide you while you season your food. I keep it simple with the chicken. I go with an all purpose seasoning then I add garlic powder, onion powder, a little sage or oregano (depending on who's closer to the front of the cupboard) and a touch of cayenne.

Once you're ready to cook, you can either toss it in your slow cooker early in the day and let it work its magic while you work from home or fight with your kids or whatever goes on in your house. Follow your appliance's instructions based on the amount of chicken you're using and move on to what's next.

If you're not using a slow cooker just toss your chicken in a baking dish and cook it in the oven until it's tender. Regardless of how you cook it, DO NOT discard your stock!

When your chicken is cooked, use two forks to shred it. You want it to resemble pulled pork. Slice your French bread open but don't separate it (hope that makes sense). Spread some of your avocado ranch dip on the bottom half (about 2 or 3 TBS). Lay some chicken on top of the spread. As much as you want so long as it's not difficult to eat. Put your cheese evenly on top of the chicken and then put the whole sandwich in the oven (on a cookie sheet of course) to toast for 5-10 minutes on 400*. You basically want your cheese to melt and your bread to toast a little.

Once your sandwich is ready, just close it and cut it up into individual sandwiches. Place the pieces on a cutting board and serve.

Avocado Ranch Spread/Dip

Y'all! You do not wanna miss out on this stuff! It's so friggin good and simple to make! Combine your avocado, the juice of half a lemon or lime, your packet of ranch seasoning, and your cup of sour cream. Mix them all together and be sure to mash your avocado well in the process. Set it aside until dinner is served.

Garlic Parm Fries

You can make your fries from scratch or just save yourself some time and grab some freezer aisle fries. This is a judgement free zone! I prefer frozen fries for this particular style; Especially the battered ones!

First thing you wanna do is mince about 4 or 5 cloves of garlic finely. If your chirren don't care for garlic please set some fries aside for their little basic selves.

Add your minced garlic to a large bowl and then toss your frozen fries in the garlic for about a minute. DO NOT use that nasty minced garlic from the jar. I WILL judge you for that! Spread the fries on a cookie sheet and bake based on the bag's instructions. Keep the garlic that's in the bowl because right before your fries are ready you're going to melt a tablespoon of butter in a pan with that garlic. Once the fries are done and your butter is melted, toss all of them in the same large bowl and then shave or grate some fresh parmesan all over them. Crack some black pepper on that thang too if you wanna do the most!


If you're serving crudités I imagine you already know what to do but IF by chance you don't, just wash, cut and plate the veggies you're serving. You can also buy a prepared veggie platter from your grocery store's produce section to save time. These raw veggies and that avocado ranch dip will be a be hit.

This particular meal is perfect for family style dinners that way everyone can just dig in as much as they like. If you and your family like spicy food you can add a little hot sauce to your chicken while you shred it.

If you're cooking for one person or just two, Then just use hoagie rolls and assemble individual sandwiches. You can store any chicken you have left over to top salads with or make more sandwiches later.
